In 2009, TAM Lineas Aereas and Supplair introduced a fully disposable concept for its economy class service from all bases in Europe, the U.S. and selected bases in Latin America.

Using a network of Central Production Units (CPUs) and leading manufacturers, this pan-continental operation provided the airline with consistency of service, greater control on the offering, more simple management of its economy catering requirements and weight savings.

Consistency, because food is centrally produced, packed and distributed. Greater control and more simple management since Supplair supervises all aspects of the design and supply chain from menu design, auditing suppliers, quality control, production planning and logistics. Weight savings are a direct result of switching the airline from rotable equipment to a range of disposable trays and dishes.

‘Brasil a Bordo’ (Brazil onboard) was the theme of the menus in 2009, and reflected the culture and culinary excellence of Brazil. For 2010, TAM selected the theme ‘Toque de Cha’ (Touch of Tea). Inspired by tea, the elements of Toque de Cha not only include tea in menu recipes, but also reflect the countries where the tea is produced, such as India, China and Japan.
